Garlic Mashed Potatoes

If you like garlic you have to try these mashed potatoes. Cooking the garlic and potatoes infuses the dish with a wonderful aroma. Don’t be afraid to use more garlic to your own taste!

Serves 2

  • 2 medium russet potatoes, about 1 pound
  • 4 or more garlic cloves, peeled and crush
  • Salt
  • ⅓ cup milk
  • 2 Tbsp. butter

Peel potatoes and quarter lengthwise then cut crosswise into ½-inch thick pieces. Place in a saucepan along with the garlic and enough water to cover by 1 inch. Season with ¼ tsp. of the salt.

Bring to a boil, reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.

Drain the pan and return to medium heat for 1 or 2 minutes to dry somewhat. Remove from heat.

Warm the milk in a small saucepan and pour over the potatoes. Add the butter and mash until smooth. Adjust salt to taste.
