Last night I made a vegetarian dinner of potatoes with rice and peas following Indian recipes. Many Americans, and I suspect many Europeans, are surprised that Indians treat potatoes as a vegetable to be eaten with rice rather than as a starch. This dish is from the westernmost Indian state of Gujarat, famous as the home the Mahatma Ghandi. The recipe I used is in Charmaine Solomon, The Complete Asian Cookbook (Dee Why West, NSW, Australia: Lansdowne Press, 1976).
